Poulet Basquaise (Basque Chicken)

This is a traditional Basque dish consisting of Chicken braised with peppers. Originally, “basquaise” designated a dish made from vegetables and bread, but today normally refers to an dish with a Piperrada (or Pipérade), consisting of stewed onions, peppers and tomatoes similar to a sofrito. This is served simply over rice or couscous. We will be providing a parchment paper lid to seal in the juiced with braising the Basque chicken and peppers.
