The Hound really likes chicken….and usually eats two!

The chicken will will be glazed with honey and roasted. The sauce will be made with mead, apple cider vinegar, and dried fruit (cherries, raisins, cranberries) and additional honey, and will be poured over the chicken prior to serving – it is very similar to a gastrique, but that is French and from the 19th century…..

Since the potato was absent throughout the middle ages, we are substituting mashed turnips. The Glazed Carrots are glazed with….yes, more honey…and seasoned with Poudre Douce (cinnamon, cassia flowers, ginger, grains of paradise, nutmeg, Galangal, and sugar)
