For this creamy risotto, we will be providing Wild Black Trumpet Mushrooms, known as “La Trompette de Mort” or trumpet of death in French due ot their characteristic black color. From the Pacific Northwest, these delicate mushrooms cook extremely fast and intense, woodsy and deep flavor with a slighly sweet overtone. The dish is finished peas and loads of Parmigiano Reggiano. The meal kit comes with traditional Arborio rice, which has a high starch content with lends itself to cooking on the stovetop and provides the much desired creaminess.
